Banana-Nut Pancakes

This recipe is for a traditional American banana-flavored pancakes with fresh banana, whipped cream and chopped pecans on top.

Ingredients for Banana Syrup

  • 1/2 cup corn syrup
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon banana extract

Ingredients for Pancakes

  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1/4 cup vegetable oil 1 egg
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • 1 teaspoon baking soda
  • 1 teaspoon banana extract
  • 1/4 teaspoon salt
  • 1 banana
  • 1/2 cup chopped pecans
  • whipped cream


Step 1: The first step to make this dish is to prepare the banana syrup. Stir the corn syrup, water and sugar together in a saucepan over high heat. Once the mixture boils, remove the pan from the heat. Mix vanilla and banana extract into the mixture.

Step 2: Mix together all the ingredients that are listed under pancake with an electric mixer. Make sure the batter is smooth.

Step 3: Preheat an appropriate-sized griddle to medium heat. Coat the griddle with oil or cooking spray. Using a ladle, pour around 1/4 cup of the batter onto the griddle. Let the batter spread out a little. Sprinkle about 1 tablespoon of the chopped pecans over the pancake and ensure that they set in place.

Step 4: Cook the pancake for about 2 minutes on each side. The surface of the pancake should be slightly browned.

Step 5: Stack the pancakes and serve it with sliced banana, whipped cream, syrup and the remaining chopped pecans on top.

Cream of Wheat Pancakes

This version of pancake recipe involves cream of wheat. The dish can be served with sausage links or friend bacon, or garnished with fresh fruits and nuts.


  • 3 cup nonfat yogurt
  • 1 box pancake mix
  • 1 box cream of wheat cereal
  • 1/4 cup honey
  • 2 teaspoons baking powder
  • 5 cups nonfat milk
  • 4-5 beaten eggs
  • 1 cup vegetable oil


Step 1: Mix the honey and yogurt to form a fine paste. Cover it and set aside in the refrigerator for about an hour.

Step 2: In a large bowl, combine pancake mix, cream of wheat and baking powder. In another bowl combine eggs, milk and vegetable oil. Mix the content of both the bowls until the batter is smooth.

Step 3: Heat a lightly greased griddle and pour the batter with a ladle. Cook until the pancake turns brown.

Step 4: Serve each plate with pancakes and 1/4 cup of honey and yogurt mix.

You can add fruit topping such as apples, peach and strawberry to finish off this breakfast delight. Dried nuts can also be used to the batter while mixing.

Traditional Russian Pancakes

Also known as Russian Blini, these pancakes have a nutty flavor due to buckwheat flour. The pancakes are popular in Russia during the spring festival that marks the end of winter. Russian pancakes are made in different type of flours and are served with different side dishes such as minced onion, eggs, seafood, even wine.


  • 1 cup all-purpose flour
  • 1/2 cup buckwheat flour
  • 1 cup milk
  • 1 teaspoon instant yeast
  • 2 tablespoons melted butter
  • 1 egg
  • 1/2 teaspoon salt
  • Fresh fruits for topping


Step 1: Mix flours, instant yeast, and salt in a bowl. Pour milk until the mixture is smooth. Cover the bowl and set aside at room temperature for about an hour or two or until the batter raises. Add butter and egg into the batter. Cover the bowl and let it stand for another 20 minutes.

Step 2: Heat a griddle or nonstick skillet over medium heat. With a spatula, pour the batter onto the pan one by one or in batches without crowding. Cook for about 2 minutes on each side or until the pancakes turn brown. Repeat the same with the rest of the batter.

Step 3: Serve the pancakes with fresh fruits of your choice. Other toppings or side dishes that can be served are smoked salmon, cooked eggs, sour cream or lemon wedges. For whole wheat pancakes, replace all-purpose flour with whole wheat flour. You can also substitute any fruit jam for eggs, sour cream and lemon.
