How to Make Quiche

Quiche is a versatile French dish that can make an excellent breakfast, lunch or dinner depending upon the filling. It can also be an appetizer or served cold as a finger food. It is an open pastry with a pie crust and the most basic filling is made of eggs and milk or eggs and cream. Quiche lorraine is a very popular variation of the basic quiche and you can also create an easy vegetable quiche as well. It is a dish you can definitely get creative with and make quickly and easily for any occasion. The filling should be soft and custard-like and you can choose to either use a store-bought crust or make your own crust. It is best to work with a frozen crust because then it will be crisp and you do not risk it being soggy.

Basic Quiche Ingredients

  • 5 eggs
  • 1 cup of cream
  • pie crust

These ingredients are used in almost all quiches. To create variations you will be adding additional ingredients such as meats, cheese and vegetables. Start by thoroughly beating five eggs in a bowl. Begin beating by breaking the yolks and then beat the yolks and whites together. Do not use an electric mixer because you risk over-beating the eggs. Over-beating will create a quiche that is too solid. A quiche should be very light and have a smooth texture. Use heavy cream or whipping cream. You can also use milk instead or use half cream and half milk. Beat your cream in with your egg. Pour the mixture into the pie crust and bake it for about 45 minutes on 375 degrees. Let it set for about ten minutes before slicing and serving it.

Quiche Lorraine Ingredients

  • 5 eggs
  • 1 cup of cream
  • 1/2 cup Gruyre cheese
  • 1/2 cup chopped ham
  • pie crust

Quiche lorraine is a bit more savory than a basic quiche because it contains ham and cheese. You start the quiche lorraine filling in the same way that you start a basic quiche – with eggs and cream. In a separate bowl, mix the Gruyre cheese and the ham. Gruyre cheese is great and creates delicious strings after it has cooked. Put the cheese and ham into the pie crust first, evenly distributed. Pour the egg mixture over it and then cook it in the oven for 45 to 50 minutes on 375 degrees.

Vegetable Quiche Ingredients

  • 5 eggs
  • 1 cup of cream
  • spinach
  • red bell pepper
  • mushrooms
  • 1/3 cup Appalachian cheese
  • pie crust

For the best vegetable quiche you want to use fresh, raw ingredients. Give your spinach leaves a rough chop. Dice the red bell pepper and the mushrooms. Mix these ingredients together with the Appalachian cheese and then add them to the bottom of the pie crust. Make sure all of the ingredients are evenly distributed and then pour the basic egg and cream mixture over it. Bake the quiche for 45 minutes to an hour on 375 or 400 degrees. You can tell it is done when it is evenly puffed up on the top and lightly brown.

You can put essentially any vegetables into a quiche, but be careful of things like tomatoes which have too much moisture. The moisture will result in a soggy quiche with the wrong texture. Various greens and peppers work really well. Broccoli is another great option. The red bell peppers give the quiche a colorful look and make it a great summer dish.

More Quiche Variations

Quiche is extremely easy to make and relatively trouble-free. All quiches bake for about the same amount of time and they can be served either hot or cold. You can choose to have one or more ingredients in addition to the basic mixture. Quiche au fromage is just quiche with cheese. Quiche aux champignons is with mushrooms. Quiche florentine is a spinach quiche. It makes an excellent party food and can be served on the side of many other dishes.
